This documentary, a joint collaboration by Japan and America, deals with "Washoku" (Japanese cuisine) which was registered as a UNESCO Intangible Cultural Heritage. It is directed by Suzuki Junichi, who is engaged in Japanese-American film production.
Behind Japanese cuisine's expansion around the world are the tireless efforts of those involved. The chef's of famous restaurants and Washoku scholars appear including trading company chariman, Kanei Noritoshi, who 50 years ago believed sushi would gain popularity in America and has developed distribution channels for local ingredients. Each of them give their thoughts on delicious, healthy, and delicately beautiful Washoku.
